I used regular all-purpose flour aka maida and I adjusted the KAF recipe. I didnt weigh out the ingredients and went with my cup measurements. By the way, my 1 cup measures 250ml. I am sorry it didnt work out for you.

I typically make a double batch at once, then store half in the fridge to use a few days later for my next bread project. (You can add tangzhong to any bread recipe, not just ones that call for it.) Kneading for at least 12 minutes is important. For my first batch, I only did a 5-minute knead. I've made KAF's recipe before and usually my dough sticks to the sides of the bowl a bit too. Not sure if I'm doing it right, but the way I go about it is, mix all the ingredients except melted butter, wait until the flour just mixes together, pour in the butter, and generally let it go for 10 minutes (sometimes a little less) on the 3rd speed setting of a stand mixer.
